When I was pregnant with my first daughter, my mom and I had lunch dates at California Pizza Kitchen just for their Italian Chopped Salad. If you've never had it, their Italian Chopped Salad is a delightful mix of fresh ingredients like crisp romaine lettuce, juicy tomatoes, and savory salami, all topped with a zesty Italian vinaigrette. I am sure the CPK version is loaded with sugar and seed oils so I had to create a healthier version for you and for me! The vibrant colors and flavors make it an excellent choice for a refreshing lunch or dinner. This versatile salad can be served as a side dish or as the main course. Dressing Ingredients
3/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 ½ tbsp grated parmesan or hard goat or sheep cheese
1 tbsp dijon mustard
1 tsp shallot, minced
1 tsp dried parsley
¾ tsp dried oregano
½ tsp garlic, minced
¼ tsp black pepper
⅛ tsp sea salt
Salad Ingredients
½ head iceberg lettuce chopped into ⅛-inch strips
½ head romaine lettuce chopped into ⅛-inch strips
6 leaves fresh basil leaves chopped into ⅛-inch strips (chiffonade)
1½ cups turkey breast, diced to 1/2 inch (or use chicken, tofu, tempeh or shrimp!)
1 cup dry Italian salami cut into thin strips
1 cup manchego cheese, shredded
½ cup chickpeas chopped
1 cup ripe tomatoes, diced to 1/2 inch
1 tbsp green onions, sliced
Instructions
To make the dressing, add all of the dressing ingredients to a small jar and shake well. Refrigerate until ready to serve.
Toss the first 7 salad ingredients together with the dressing in a large mixing bowl.
Transfer the salad to chilled salad plates. Surround each serving with a ring of diced tomatoes, top with green onions and enjoy!
