3 healthy make ahead Christmas breakfasts prioritizing protein, fiber and nutrient density
support your metabolic health with real food recipes

I spent the last 9 days in London with my husband, Dr. B, celebrating our 30th anniversary and my 58th birthday! We had some fabulous meals, met up with friends, and walked between 16k and 20k steps daily sightseeing and shopping. It was a lovely getaway just for the two of us before we have our four children with us for Christmas and New Year’s Eve.
With Christmas just around the corner, I’m thrilled to share two festive and nourishing breakfast recipes by
, the incredible chef behind Modern Women’s Nutrition.Anja’s culinary journey is nothing short of inspiring. From catering championship dinners for Steph Curry and LeBron James to winning on the Food Network, she’s spent her career creating recipes that are as practical as they are delicious. Today, she focuses on empowering women with meals that balance blood sugar, support hormone health, and—most importantly—bring joy to the table.
, and I have been creating and planning a collaboration surprise (to be revealed soon) these last several months over Zoom, and we thought it was high time we met in person. Anja traveled from France to meet me in London, and we enjoyed a fabulous dinner at the restaurant ROVI by .
This week, Anja shares two stunning breakfast dishes that pair perfectly with your Christmas morning traditions, including my new Monkey Bread recipe!
Mom’s Grain-Free Granola with Yogurt & Clementines: A heartwarming recipe inspired by Anja’s mom, this crunchy, protein-packed granola is made with nuts, seeds, walnuts, and cinnamon. It’s delightful served over Greek yogurt with fresh oranges for a vibrant start to your day.
Gruyere Sun-Dried Tomato Egg Muffins: These crust-free, savory egg muffins are loaded with Gruyere cheese, sun-dried tomatoes, and fresh rosemary. Perfect for meal prep, they make an elegant addition to your holiday brunch menu.
These recipes, like mine, are free of gluten, refined sugar, and processed ingredients, focusing instead on nutrient-dense, whole foods that leave you feeling amazing. I have also included dairy-free swaps for the yogurt parfait and the egg muffins!

Definitely trying these! Thanks Beth
We made this marvelously delicious breakfast after prepping the veggies the day before, and subbing Dubliner cheese (because we had huge block--thank you Costco!) and they were super flavorful. A big hit and a nice change from our usual breakfast casserole. Thanks, Beth!
