A Mother's Day surprise to keep blood sugar stable + satisfy your sweet tooth
Sending warmth to everyone on this Mother's Day, whatever this day means for you. For some, it's a celebration; for others, a day of remembrance or complex emotions.
Twenty nine years ago, I became a mother. This year marks my first Mother's Day without any of my children around, bringing its own unique blend of emotions. As Dr. B and I sail in Thailand with dear friends, I'm reminded that motherhood is carried in the heart, regardless of geography.
To my children who may be reading this: I love you immeasurably, and being your mom is my greatest privilege. The young adults you've become fill me with more pride than words can express.
To my mom: Thank you for showing me what love looks like. The strength, wisdom, and compassion you modeled have shaped how I mother and who I am. I love you and am forever grateful.

2 Ingredient Fudge
And now, my gift to you: single serve, 5 minute, 2 ingredient fudge. As with many of my recipes, this was inspired by a conversation in our paid subscriber chat:

Blood Sugar Balance: The combination of healthy fats and minimal carbohydrates creates a treat with a low glycemic impact, preventing the sharp glucose spikes and subsequent crashes associated with traditional fudge.
Satiety: The fat and protein content helps trigger satisfaction signals to your brain, reducing the likelihood of overconsumption compared to traditional sugary desserts.
Metabolism Support: The small amount of caffeine and theobromine in chocolate may provide a gentle metabolic boost, while the healthy fats in nut butter help support hormone production.

the recipe: 2-ingredient fudge

Refined sugar free, gluten free, low glycemic
Equipment
Ingredients
Single Serving:
1 tablespoon almond or peanut butter (just nuts, no added sugar or oil)
2 tablespoons sugar-free chocolate chips or Taza dark chocolate, Beyond Good 92%, or Lindt 90% chopped
Method
Prep ingredients: Place the almond or peanut butter and chocolate chips in a small microwave-safe bowl.
Melt: Microwave for 20-30 seconds until the chocolate begins to soften.
Combine: Stir until smooth and thoroughly combined. If needed, microwave for an additional 5-10 seconds.
Shape: Pour the mixture into a small silicone mold or onto a piece of parchment paper.
Set: Refrigerate or freeze for at least 5 minutes or until firm.
Enjoy: Store any leftovers in the refrigerator or freezer.
Swaps
Nut butter: Try cashew, sunflower, or macadamia nut butter for different flavor profiles
Chocolate: Use 85%+ dark chocolate for lower sugar content or stevia-sweetened chips for a keto option
Add-ins: Mix in a pinch of cinnamon, cayenne, or espresso powder for flavor variations
Sweetener: Add a few drops of liquid monk fruit or stevia if using unsweetened chocolate
Notes
Blood sugar tip: The healthy fats in the nut butter slow the absorption of any sugars, helping maintain stable glucose levels.
Storage: Keep in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
Flavor enhancers: Add ¼ teaspoon vanilla extract or sprinkle with flaky sea salt before chilling for a flavor boost.
Texture tip: For smoother fudge, ensure ingredients are fully melted and well incorporated before setting.
